I went on a vegetarian kick during May. Im not saying every single meal I ate was vegetarian, but I only ate meat about once a week and I’m almost convinced it was due to this salad.
This salad not only combines many intricate flavors, but it is hearty enough to be a meal all by itself! The dressing is super simple (it’s literally just lemon juice and balsamic vinegar!) which gives the salad a very refreshing taste. Plus it keeps well in the fridge so you can have it all week.
In order to make the salad a satisfying meal, I have included add ins such as chia seeds and hemp seeds. Chia and hemp seeds both are high in protein for being such a small ingredient. Both also have fatty acids such as Omega-3s and support heart health!
This recipe makes around four servings and takes about an hour to complete, although not all of the time is active cooking. I cannot recommend it enough!
