I think gnocchi may genuinely be my new starch of choice. I tried it once in Germany and it was such a heavy meal that I thought I wasn’t a fan, but after much deliberation and research I have decided that it was definitely the way it was prepared.
Two of my three most eaten meals in the past few months have gnocchi as the star, the other favorite is my leek and orzo salad, maybe I will publish the other gnocchi recipe sometime (luckily I already have it written down). This is the lighter of my two gnocchi recipes and it is fairly simple. The only two ingredients that aren’t listen in the title are garlic, a lot of it, and basil!
Usually I try to stick to one pot meals when cooking for myself to make less dishes, but this meal is well worth the second pot it requires. It is light and fresh with very simple yet delicious flavors.
My favorite way to enjoy this dish is on the side of a roasted vegetable and some breaded air-fried chicken.
I love sharing this meal with friends and family. The first time I made it is with my childhood friend/basically cousin Pippa, then I made it two weeks later with my cousin Lucy! My mom has also requested that I make this for them before I leave for Europe!
