I just turned twenty-three and when I look back over the past few years, so many things have changed.
I graduated college with a degree that I haven’t used since I graduated.
I have lost many friends, but made and strengthened even more.
I moved out of my college house and said goodbye to my college roommate of three years.
I worked five jobs: baker for a coffee shop, reception at a safari camp, slushy maker at the state fair, barista at a different coffee shop and volunteer coordinator for a parks and rec department.
I left my friends, family and home to travel the world.
With all that is constantly changing in life, sometimes it is nice for a few small things that I can control to stay the same. These small things have become very nostalgic and grounding for me, in a way I would have not thought was possible (except for the third one).
My water bottle covered in stickers that I got my brother for Christmas six years ago and then stole three months later.
The sweatpants that are a little bit more fancy than normal sweatpants that my friend Kylie showed me at h&m three years ago.
Mundane but cherished talks with my dad where we chat about groceries and what we’re cooking this week.

The ratty old backpack I have somehow kept alive since the seventh grade.
The cream sweatshirt I blatantly stole from my boyfriend, that he kindly refers to as “your sweatshirt.”
Over the past few years, I have evolved, and something has evolved alongside me.
Avocado Egg Toast.
I have eaten this for breakfast almost every single day since 2021, both of my past roommates can attest to this.
Although it is essentially the same thing at its core, mainly comprised of avocado, toast and eggs; it has evolved into so much more. By adding a teaspoon honey into the avocado back in 2022, it solidified itself as an every day essential. Later I started adding chili oil, which started a whole new wave of obsession, both with the chili oil and my old time favorite.
Roughly, I have eaten this same meal around 600 times. Maybe more maybe less.
To me, avocado egg toast tastes like eating breakfast with my mom and dad, getting ready for work, getting my protein after working out, a lazy day at home, lunch after waking up late.
Having another way to keep myself grounded and remember home has been very helpful while in the UK. Although my friends and family message and call, plus I have Jordan, it does get a little tiring and I do start to feel homesick. The avocado egg toast reminds me that I can do hard things, I have done hard things.
I am proud of how far away from home I am making avocado toast.

How far I have come since just a few years ago.
